View Full Version : Grilled Stuffed Peppers

I make some peppers like this once and a while. I dont know exact amounts,i just sort of wing it.
12 Jalepenos or Yellow chili's
12 strips of bacon
1 8 oz's of cream cheese
1/2 cup shredded chedder cheese


Cut the peppers down the side so you can get the seeds out.Leave the tops and stems on. Mix the chedder and cream cheese up together. Fill the peppers with the cheese mixture. Wrap them with bacon and pin them with some toothpicks.Grill until the bacon is cooked to your liking and serve with a real cold beer. :thumbsup

My father does these too. Except he cuts them completely in half removes the seeds. Cooks the bacon chops it up and mixes it up in the cream cheese the grills them until the pepper gets some brownish to it and the cheese is starting melt. some good stuff thats for sure.

another variation is to stuff a "lil smokie" into the cream cheese,then wrap with bacon and grill them. we do some with & without the smokie on the sandbar, always fun to watch people carrying them on top of their beer waiting for the cheese to cool enough to eat:rotflmao: nickname for the ones with the smokie is " buffalo turd":thumbsup

I just made these but instead I put them in the oven and lot's of the cheese oozed out. Does this happen when you grill them?

Yes.. I also stuff mine with Shrimp...

I also make these but I cook up ground sausage and mix it with the cream cheese...garlic and spice to taste. :drnkfr

we do the same thing, except our stuffing is cream chease, bacon bits, and green onion.... big hit!

i lay a sheet of tin foil on the grill.....easy clean up
because you are gonna have some cheese ooze out no matter what

i have done some simular,but used Anaheim Chile. stuffed with a shrimp,cheddar and fetta mixture,and sometimes chopped mushrooms in the mix as well.going to have to try adding bacon to the party next time.:thumbsup

You can use the rack or cut in half lengthwise and fill like little canoes. I've done it both ways and they all taste great. Easier to fill when cut length ways I think. They are hard to screw up so just make what ever is easiest for you. Think about, have you ever eaten anything bad that had bacon?:D

An easy way to get the filling into the peppers is to put mixture in a ziplock freezer bag and clip one of the bottom corners and squeeze into chili.:thumbsup
