View Full Version : Anyone with tips for a hell of a grilled cheese sandwitch?
My grilled cheese just don't cut it anymore.
Oroweat bread with Velveta,,,, their has to be a better, off the hook way to do it at home.
We turned a corner on foot in London and this guy with a cart had fresh baked bread he'd slice by hand, and two huge rounds of cheese he'd shave by hand and a hot press.
This guy has a hell of a money making business.
Fantastic grilled cheese sandwiches from the cart,, that experience spoiled us deluxe.
Anyone do a over-the-top grilled cheese?

Grilled cheese is about as easy as it gets in my book.
Start with your favorite bread, whatever it is.
Take two slices, butter both sides and lightly grill one side of each piece on a griddle. Take your fresh cut cheese (I personally like sharp cheddar and mozzarella) and put it between the two lightly grilled sides of the bread. Grill the two outward facing sides until brown and enjoy!
I think the key is the butter and the fresh cheese. NO WAY I would ever use Velveeta...
Not over the top, but just had them last night with soup and they were delicious!

Try Mayonnaise on your bread instead of butter.
Like sharp cheddar myself and maybe had some ham or turkey.
I was actually thinking some Whole Grain and Pepper Jack cheese. Haven't tried it yet, but sounds good.

what I do. I take 2 cast iron skillets, get them hot. trun them upside down, a little butter, then place the toast on the bottum and the other skillet on top. set the timer for 3 mins and leave them alone.

I've never done it, but if I was to make a grilled cheese. I'd try Mizithra (sp?) cheese. It's really rich tasting.
Mess around with mixing up a few diff types of cheeses.

First...
Sour Dough bread, dont even bother with anything else. Tillimok cheese as well. This is a must. Real butter, absolutely.
Then...............
Pick up a jar of pickeled jalapeno chilis at the store, and add em in just before grilling. Dont over do it, or you'll be hatin life the next day!!

Buttered sourdough, any cheddar cheese and a few slices of cappacola, or as Tony Soprano says "gabbagoo". That's some good stuff.
Or
Buttered rye bread, pepper jack cheese, some ham slices (I like Honeybaked ham slices) and some wing sauce on the ham before you close it up. That's good with a nice cold brew.

We used to make them at the fire station with a scoop of Ortega chilis (the diced ones in the can) spread on each sandwich.

Sour dough bread with briee cheese sliced, chocolate chips and chopped basil leaves. cook in a panini baker.
Sour dough bread, provologne and muenster cheese and sweet jalapeno jelly.

Stoffers Mac and cheese bake in a Pyrex pan until it's a little crispy. Sour dough bread with butter and sliced grilled tomatoes, put that together and grill it.

Why is it that the Bowling Alley (or any place that uses that kind of cook top) taste so good? LOL.
I like almost any kind of grilled cheese and have tried many of the variations mentioned, except the ortega chilies. It has to be made with real butter and in cast iron or one of those sandwich press. Favorite is on sourdough (with parmesan) or on rye.

Butter on the outside, a little mayo inside. White american cheese if you can find it, shredded sharp chedder and a sprinkle of shredded parmesan. Also the best bread is sheepherder's bread. Grill on!:skull
