Rudder Placement

I have been looking for info on the subject and can't seem to find anything conclusive regarding centered or off-set. I'm trying to determine if installing the rudder off-set for ease of shaft removal is worthwhile considering any other possible affects on 70 mph boat.
I replaced the keel (center) board and I'm in the process of re-rigging everything on this mostly flat bottomed boat. Just thought I would ask about the rudder while I'm at it before I drill the new hole for same.

Hey beaverfab, can you suggest what side to offset for a LH prop? I will be using hydraulic steering with my new set-up.

LH prop will want to make the boat go right, so offset the rudder to the left to counteract that. (from the back of the boat.)
