I'm in the mood to make meatloaf, anyone have some killer recipes they want to share ?

I made some a while back that turned out killer. It was made with ground turkey and quinoa.

Let me see if I or Amy can find the recipe.

I do this one on the smoker all the time and love it you can also do it in the oven at 300*

*8 ounces onion & sage flavored croutons (ground in processor
*1/2 teaspoon ground black pepper
*1/2 teaspoon cayenne pepper
*1 teaspoon chili powder
*1 teaspoon dried thyme
*1/2 onion, finely chopped
*1 carrot, finely chopped
*3 cloves garlic, minced
*1/2 red bell pepper, finely chopped
*3 lb ground beef
*1 1/2 teaspoon kosher salt
*1 egg

Meatloaf is good "food Velcro". :D Pretty much everything sticks to it.

Start with a couple lbs of ground beef, a cup of breadcrumbs, an onion, and an egg. After that just put in whatever sounds good.

Mix together, make it into a loaf, bake at the magic number (350) until cooked, 45 minutes or something like that, at least till it's not pink in the middle.

You can riff on the basic recipe, like Big River adds seasoned croutons instead of bread crumbs. Pretty much any ground meat can be used but some of the more exotic stuff (like lamb or wild meats) will dry out.

I think this come's out real yummy

1 lb ground beef
1 can cream of mushroom soup
1 packet of lipton onion soup mix
1 box of stuffing
2 eggs
garlic salt
pepper

takes about an hour or so closer to hour and half at 350

Add a few strips of bacon on top while baking it, with whichever recipe you decide:thumbup:

Our son likes it when after baking it. We wrap it with pilsbury crescent roll dough then finish baking it. Also known as beef poorington.

That's a great idea.

I keep it simple.
My secret seasoning is about a tablespoon of Spike seasoning in the mix.
Just ground meat, oatmeal instead of bread crumbs, 3 eggs, onion powder, a little L&P, some Heinz ketchup, don't forget the spike, tsp of kosher salt, mix by hand,, 400 Deg F for about an hour.

Drippings go into the gravy with beef broth,, served with fresh mashed potatoes.

I would add ground pork in with the beef. A layer of cheese in the middle, and a bbq sauce in the mix and more on top.

Mine would be ground beef , 1 onion finely choped / diced, 1 green pepper finely chopped / diced , 2 egg's , potato chips & corn flakes mixed ( crushed ) , salt & pepper ,with bacon and ketchup on top of the formed loaf ,covering the pan with tin foil baked at 325 Deg for one hour and a half .

so we have one of these meatloaf trays.


Last night night I had the major brain fart and didn't put it on a cookie sheet when I threw it in the oven.
Timer goes off all is good and as I pull it out and move toward the stove top to set down I remember that the little handles aren't secured to anything.
To late, the bottom starts to slip and as I try and catch it (which I kind of do) all the hot drippings pour all over my foot and the freshly stained kitchen cabinets the little woman had just finished.. Nothing better then fifty cent size blisters on the top of your foot. Needless to say, I don't think my MIL & SIL have heard the word fuck that much in their lives.:D:(

1 pound of ground beef
1 pound of Jimmy Deans sausage (regular or sage)
1/2 cup of ketchup
1 envelope of lipton onion soup mix
1/2 cup of bred crumbs
2 eggs
mix together throughly
make two loafs ( there sausage is very greasy and one loaf doesn't cook rite)
cook in oven approx 1 1/2 hr @ 350 the last 1/2 hr pour another 1/2 of ketchup on top of the loafs.

My wife makes this for me when she wants something.

Follow the recipe on the Bach of the Lipton onion soup box but substitute the bread crumbs for 1 whole sleeve of Ritz cracker. And 80-20 beef.

Made this tonight.

2 lbs 80/20 beef
1/2 cup mr yoshidas sauce
1 packet liptons onion soup mix
1/4 cup diced onions
2 eggs
6 crumbled slices of bacon
1/2 cup of cheese
1 cup bread crumbs

Combine all in one bowl and mix and layer raw bacon top.

Smoke at 350 directly on greased grates. Best part is it is not greasy at all.

Usually takes about 1-1.5 hours to cook to 165 internal

I had never heard the term "poorington" before,but recognize the your description from my youth.

94/6 beef,a little over a pound and 3/4 pound pork sausage
Onion,peppers(red and orange,the little guys)3 little garlic cloves,fresh cracked black pepper,about a 1/8 tsp of turmeric,just a dash of tarragon,3/4 cup of oatmeal,about a 1/2 tsp of Himalayan pink salt,2 tbs or a little more of Worcestershire sauce,a tbs of BBQ sauce,2 eggs,and a heavy tsp of the suggested by TPC Spike seasoning.Baked at 350 for an hour and 5,plus 8-10 after the cap is installed.

Yum!!!
