Nothing beats soup on a cold, rainy day. :thumbsup
I made this soup today.
1 rotisserie chicken -- shredded. I just bought one from the store - Rosemary and garlic flavored.
1 28oz can of diced tomatoes
32 oz organic chicken broth
1 sweet onion -- diced
3 jalape?os -- diced. Recipe calls for 2 jalape?os. I like heat, so I added one more, including the seeds from one jalape?o.
2 cups shredded carrots
2 cups celery -- chopped
1 bunch on cilantro -- finely chopped
4 cloves of garlic -- minced
2 tbs tomato paste
1 tsp chili powder
1 tsp cumin
sea salt and pepper to taste
olive oil
1-2 cups of water
Take a large pot and add a bit of olive oil and about 1/4 cup of chicken broth. Add onions, garlic, jalape?os, sea salt and pepper ... cook until onions are soft. Add more broth if needed.
Add remaining ingredients (not chicken or cilantro) and 1-2 cups of water. Cover and cook on low for 2 hours.
With 15 minutes left to cook, add chicken into pot and half of remaining cilantro.
When soup is done, grab a bowl and serve with sliced avocado on top with more cilantro.
