I shot this buck in Colorado then came home and got sick for a week so put all the quarters in the freezer for a few weeks. Well I finally got around to turning it into sausage this weekend. With the help of my girls of course. The last picture is the sandwiches I made tonight. Smoked a brisket all day yesterday and topped it with the venison sausage we made today.
