Breakfast Casserole

This one is a winner if I don't say so myself :D

So the picture below shows the ingredients

I used chicken sausage b/c I'm always watching my calories and fat intake, but of course you can use regular ol' pork sausage :thumbsup

anyway... brown the sausage
in a separate bowl mix 1/2 c. water with the country gravy

in a big bowl mix everything:
Sausage
8-10 eggs
mushroom/onion
stuffing
little bit of cheese
country gravy mixture

bake for 45 minutes at 350

Done :D

No we ate it :D

I know I shoulda taken pics but didn't. It looked like a reg. egg casserole but what I really liked was the stuffing 'fell' to the bottom of it and the eggs and the rest on top. :thumbsup

Oh good glad you liked it :thumbup: I think it's a great brunch casserole to munch on watching football and having some cocktails :thumbup:

We made it this morning.
Pork sausage, jalape?os and queso quesadilla sliced on top.
Very tasty.:thumbsup

This thing is the bomb made it yesterday. IMO if your out doing the off-road thing, this is a tasty and easy receipe to throw together. Thanks for sharing.

We made some at home right after you posted up the recipe. (last time) It was GREAT, and we will make it again for guests, real soon. Thanks for teaching us this great and different way to make a nice breakfast. !!!!

question. Did you prepare the stuffing before adding it in, or just mix the dry contents in?

I tried this about a month ago and my wife got the Mrs. Cubbison's stuffing - not enough seasoning, but still very good.

Last night we tried it again, but with Stove Top stuffing, I omitted the onion, added a can of RoTel tomatoes, used the spicy Jimmy Dean sausage, and grated cheese instead of the pre-shredded stuff, and used canned mushrooms. One of my son's friends was by last night and I thought his eyes were going to roll back into his head - it looked like he found Nirvana. He got the recipe from me and said the he was going to get the ingredients on the way home and make it tomorrow morning.

You made a fan! This will be in the weekend breakfast rotation. Awesome recipe!
