Little Tri-tip for dinner. Quick sear, 2 hrs at 225ish to 130.

Saw this on "Sam the Cooking Guy" and gave it a try tonight.
Pretty dang good.
Salmon rubbed in olive oil and seasoned salt.
Simple Hollandaise sauce and quality chorizo.

Those look great! I love trying different methods but after reading the Malcom Reed way, it's pretty much how I do them. I've learned to put quite a bit of Apple Cider Vinegar in my BBQ sauce to give the ribs a sweet/tangy finish.

Going to be at home most of the day doing yard work and garage stuff. Might as well cook this. I love torturing my neighbors with sweet sweet pig smoke all day.

Rub is 40% low salt, generic rub, 40% brown sugar, 20% garlic salt. 10lb bone in shoulder.

4 hours at 225, foil and 275 until internal temp is 190, foil off at 275 to recover the bark until around 200. Punches right through the stall. The purists might shake their heads but it works great.

Made a batch of Boudin Balls for the restaurant. For those not familiar, boudin is a Cajun pork and rice sausage. Simple to make. Usually stuffed in casing, but works just as well without.

I oven roasted a pork butt in the convection oven. Pulled the meat and ran it through the food processor, as I don't have a grinder.

Sauteed chicken liver. Any kind of liver will work. Food processor lightly. Sauteed some chopped poblano peppers and onion, fresh parsley, and lightly in the food processor.

Added all of the above to cooked rice. Seasoned with some Tony Chachere, garlic powder, salt and course ground pepper.

Put the mix in the cooler for several hours. Made balls just a bit smaller than golf ball size. Back in cooler.

Rolled the balls in flour, dipped in butter milk, and then corn meal. Fried until golden brown.

Served with house made Remoulade Sauce.

Folks were going crazy for them......:D

Easy to make at home and makes a great appetizer or game day snack

I pull recipes off of “ Sam the cooking guy” all the time. Lots of really good stuff and easy to follow recipes.
