I read about the Bacon Explosion last week. My mouth was watering so bad. It was right then I decided I needed to build one of these for the Superbowl. I planned it out Friday and on Saturday began my journey.
The ingredients are simple.
2 lbs of bacon (more is better, I used about 2.5 to 2.75 lbs)
2 lbs of sausage (Again, more is better, I used about 2.25 to 2.5 lbs)
Favorite BBQ Rub and Sauce
For lack for a good butcher shop, which apparently there are non around here, I went to Costco for the thick cut bacon and large log of sausage.
Aside from bacon straight from the pig this is my favorite.
You weave the bacon into this basket style looking thing. The recipe calls for a 5x5 grid. More is better, 8x8 seemed right.
Add a nice amount of your rub.
The recipe called for italian sausage. I bought regular sausage (it was all they had) and made my own. Add a little onion flake, italian seasoning and a touch extra oregano and it was ready. May not be exact but it had the flavor I needed.
I took some of the extra bacon and fried it up crispy. Not burnt, just chewy with a good initial crunch. I went a little crispier than normal because it was going to be wrapped in sausage and sauce. I think this was 8 strips of bacon.
Next was to take the sausage and press it down onto the bacon in an even 1/4 - 1/2 inch layer. This proved more difficult than anticipated. When I pressed the sausage down the bacon wanted to spread apart. I recommend allowing the sausage to sit for a few minutes to allow it to soften first.

After the sausage is pressed out add the bacon bits evenly. Add more rub and drizzle some BBQ sauce over the bacon.
Roll the sausage up into a log. Keep it tight as you roll so you press out any air pockets.
Next roll the roll backwards bringing the bacon layer with it. Add some more rub and your ready to grill.
It went straight from the grill to the party so I didn't get any pics of the whole thing but even after a couple hours it still looked awesome.
