Hold 4 racks of ribs on 3 wire shelves
Reverse flow smoke.
Water tray, charcoal tray comes assembled just unpack.
Nice construction.

Royal Oak charcoal seems to be fussy and difficult staying a consistent burn to maintain temp where as the Kingsford long burn is ideal for temp control. Just tickle the damper a little.

ive never had good results with royal oak in a long smoke... too much burn inconsistency... burns hot then cools or burns hot and fast etc. kingsford has a lump coal charcoal that is shaped as briquets that i want to try in my smoker to see how it performs. ive used it grilling and was pleased, just dont know the long term burn time of it yet.

What sort of temp differential do you see from the top grate to the bottom grate?

i'm with you on the royal oak as well, i wont use it any longer, I either use Fogo or Komado Joe charcoal now.

Half way thru cooking I swap the meat on the top shelf with the meat on the bottom shelf. Leave the middle rack be.

haha no worries man, almost a year to the date I posted it =)

Its important to figure that stuff out, I hosed myself doing my first big turkey last Christmas. I just tossed it on and left it to do its thing. It ended up being done on one side, but the other was about 10* under cooked! So now i rotate the bird every hour and they come out great.
