No briskets at Sam’s or Costco, I guess I’ll be doing ribs tomorrow. The plus is I dont need to get up at 2:00am to start the brisket.

I also grilled some zucchini, asparagus and jalapenos but they are not in the pic. Pretty tasty snack to end the day! 😁

got to find the neighborhood butcher. Have Tip Top meats in Carlsbad. Never had an issue, unless it is around the holiday season
There’s a neighborhood butcher close by, but his prices are 2-3 times higher than the club stores or markets. I used him once for short ribs, the meat was good, but it was too much for such a small piece of meat.

Baby back ribs baby. Tomorrow. I bought a ton last month and froze them. Hopefully they don't lose much quality.

I only have a webber kettle but I use the slow-n-sear attachment and runs pretty much on autopilot once you figure it out. Gonna rub it with some avocado oil base + a basic salt+pepper+garlic powder combo and a bit of the oakridge bbq secret weapon rub. Smoke it at around 250, maybe 225 if I wanna really go "competiton style" and do a 45 minute foil at 275f once the bones peek out a bit, then 15 min at the end with a touch of sauce rubbed on it. Everyone loves it so far and say it's the best they've had
