What’s everyone having? Might add to the spread this year.


We usually do a prime rib with all the usual sides. I think I have perfected the meat. Smoke the rib until it reaches 100, then sous vide it at 125 for 4-5 hours. Finish it off on the smoker at 450 to get that sear finish. Meat finishes at 129! It’s able to be cut with a butter knife.

Sweet potato
Broccoli casserole
Baked potato
Fresh cut green beans

That's pretty close to our menu. We will have smoked Mac & Cheese instead of sweet potatoes.

My father in law does a prime rib, I will openly admit I did not like prime rib until I had his, it's out of this world.

A dozen years or so ago, when I upgraded to a new Mrs. Hman, I changed up tradition a bit. I'll be grilling Rib Eyes on the BBQ, & Maine Lobster Tails on the Traeger. We make a potato dish that is a mixture of potatos, cauliflower, butter, heavy cream, & Manchego cheese whipped in a food processor. Also a green bean/bacon & bacon fat dish. Some type of good, yeasty, dinner rolls. Inlaws typically bring another side or two. Creme Brulee for dessert.Of course a good red wine, and usually am mixing Old Fashions and Whiskey Sours (my Mom likes a Whiskey Sour, but won't do the raw egg white mixed in). It really does thicken it up a bit.. what do they call that... the " mouth feel"....lol

I usually do a Prime Rib also. Twice-baked potatoes, southern pecan yams, baby carrots or brussel sprouts, and a cranberry/apple/candied pecan green salad.

However, this year we are going to my mom's and she always makes a turkey and ham, neither of which I like. I will just enjoy my time with her and help her make her meal :)

She's so funny. We have the same conversation every single time. Her: "Is that all the meat you're going to have?" Me: "Well, I don't really like turkey, mom. It's kind of flavorless." Her: "Oh. Yeah, I guess you're right." But every year, she still makes it. LOL

However, when they come to our place, we always smoke a turkey in addition to the Prime Rib because I know it's not a holiday for them unless they have turkey.

A couple of years ago, it was just Jeff and I and our son. We were remodeling our living room, redoing a whole rock wall for our fireplace. So we didn't even have a tree that year and went out to the casino, Charlie Palmer's at Grand Sierra Resort in Reno, for dinner. It was one of the most memorable meals I have had. The staff was all so gracious. The drinks were fabulous, we shared a wonderful steak dinner and an incredible bottle of wine. I didn't have to do the mass clean-up afterward and we only had a two-mile drive home. We left a handsome Christmas tip and thanked the waiter for working that night. He was genuinely taken aback that we appreciated him working on Christmas Eve. He said no one had ever acknowledged that to him before. Having worked in a grocery store for many, many years, I fully understand what a bummer it is to work on holidays when everyone else is celebrating.

So, if you find yourself in Reno for the holidays, I recommend Charlie Palmer's at GSR.

My parents do Christmas dinner for all of us and dad cooks a prime rib. Not a fan of the smoked ones, so it's the traditional one with the salt crust and herbs. Freakin amazing, along with cream spinach, mashed potatoes, green beans, Yorkshire pudding, and horseradish.

We will be in HI at the in-laws.

Christmas morning my FIL makes "skillet breakfast" which is his thing every year and pretty legit. For dinner FIL makes prime rib, my MIL makes quite a spread of things (green bean casserole, pies, etc).

Christmas Eve we go over to my mom's brothers house and usually cook out, smoke tako and fish etc. with lots of traditional Hawaiian food. It's usually a pretty big turnout, as we have a big family. I plan to demolish a pile of Squid luau, long rice, adobo etc. All the stuff we can't get here in TX.

The sisters & I haven’t discussed it yet but I will cook a Turkey breast and make chili Colorado for brunch/snacks through out the day, we usually serve dinner late, 6 or 7pm.

We usually get a Farmer John gold wrap ham which I slow smoke over cherry wood all day.
Appetizers are a crab and shrimp cocktail, green onions wrapped in cream cheese and deli ham slices and a port wine cheese ball that has been rolled in crushed pecans.
Side dishes are mom’s special mashed potatoes, spinach balls, green bean casserole and homemade bread.
Oh yea, don’t forget the pies for desert. Blueberry, apple, pumpkin and my special cheesecake.

Knowing me I will probably be here at the shop Christmas Eve and will just grab something on the way home. No traditions for me, all of yours sound awesome, might have to start some myself!

Christmas Eve chili is a tradition for us as well but I’ve actually won ICS awards for mine.
MY Chili is definatley AWESOME , I have more than once volunteered to take the load of the MIL , Mine is think rich from scratch with fresh sauteed cubed pork, jalepenos, Hatch chiles , sweet onions , fresh spices an "scratched slow cooked Pintos etc and it kills for leftover burritos.... BUT the wife has advised that its her Moms tradition ,, so thin tomato juice sauce with a few kidney beans and cheap ground beef (thrown in not pre sauteed) oh and a shake of "Chile powder" ... ergo My post dinner sammich ;)

We did pizza Christmas Eve w/ rootbeer in Santa mugs my mom made

Christmas Day was usually Turkey and all the sides

last year we were in havasu & made tamales from scratch and enjoyed the process with everyone helping, then went down to the island for a little fire pit fire and watched the sunset, it was really nice and not so much pressure to make everything perfect - the kids (nephews) aren’t kids any more

It’s usually just the wife and I for Christmas dinner so it’s usually Tacos and Tamales here. We have all our adult kids and grandkids over for Christmas Breakfast and that’s a No Holds Barred Event!! Last year I made Heart Attack Bowls with home made biscuits. It was amazeballs 🤩

For this special day we usually put the pipe down and smoke a prime rib instead of the usual house cleaning products. 😂

If we get the RV back from the Dealer Service Dept by then we'll be in the Desert.

The wife and many nurse GFs will be working so I'll fix dinner for their off roading enthusiast husbands and friends without local family.

Maynard has a hot tamale' coed GF and will be with her family.

Beef tenderloin with potatoes, Au jus', fresh baked pumpkin pie, roasted corn and egg nog.

I will, we are from North Yorkshire, so to say we have a high standard is an understatement. I get excited at restaurants when I see them on the menu, and 99 out of 100 times they are tasteless cardboard. They are supposed to be a luxurious little savory pastry that is crisp on the outside but not dried out when you bite in, and form a cup to pour gravy into. Only one place in Napa have I ever had a good one over here, and they are just as bad down South in England in London and such, its really a regional thing. I will post in this thread later when I dig out the recipe.

Yeah, so were my grandparents. They aren't too into flavorful food in that region. Unfortunately, my mother inherited the taste. :( We stayed with my parents much of the summer and she would get offended if I tried to cook, or we just wanted protein shakes for dinner attempting to have something on the lighter side. Her idea of a classic meal is pot roast, mashed potatoes, gravy, corn, and biscuits. Another option is flavorless, thin marinara on noodles and french bread broiled with garlic powder and butter. Ummmm, where are the vegetables? One day I said F-it! I'm cooking! We're having red beans & rice, collard greens, and cornbread! I need some flavor and veggies! Bring on the andouille, bacon grease, and crushed pepper!

Fresh garlic, green onion, cilantro, Serrano peppers, salt, pepper. Throw it all into a food processor then rub it on the meat

If you can make it to Hawaii in time there will be enough for you. If not just let me know when you are in Havasu and we can do some grilling. Life is too short to not have a good meal with friends!!!!!!

Eating prime rib and extras with good friends Xmas day and then heading out to S CA to hang with my son and grandkids. Looking forward to it!

What did I do wrong? I did the roast (4 bone), I watched a few YouTube vids and some of them removed the bones so they didn’t tear the sous vide bag. I seasoned the meat with Chinese mustard and lemon pepper and put it in the smoker at 225 until it hit 100 degrees. I then put it in the sous vide container box for about 4-½ hours at 125 degrees. Then I heated up the smoker to 450 and put it on until the meat hit 127 - it was getting crispy on the outside, and let it set for about 20 minutes. I cut into it and it was dry. Did I sous vide it too long? I left the fat cap on it too. The meat looked beautiful, but dry. I’m so bummed.

I did it exactly this way and mine turned out great.

How was the cut of meat? I got mine from Costco

Check your smoker temp manually and make sure you don’t have hot spots and the temp is what is reflected on the readout.

What kind of smoker?
