You can also use a 3/4 X 1 1/2 X 24-30"tubing and cantilever it out. Just notch the back and run it under the subtop.
To trim it out, run a piece of moulding or fasia in front of it the length of the overhang and return it at the ends.
That's a great idea and would solve a lot of issues.
On the flip side, that would require the cutout be more accurate. As it is now they just have to be close.
We use plywood for all our subtops. There's no way to keep the it perfectly dry. Undermount sink with caulking that will need to be redone at some point, holes for faucet, soap disp. water will find a way in. Not to mention the moisture under the sink that will break it down from underneath.
