200 XRi slow accleration

Didn't get to use my outboard but twice this year. Water is just to chopped out by the time I decide which boat to launch. Both times I did were Oct mid week when the water was nice and I ran into an issue with acceleration. While pushing throttle aggressively the motor would very slowly gain rpm as if I was launching slowly. It was running smoothly on all cylinders and would achieve the variable speeds I was requesting but would slowly get there. A couple of times while moving at about 45-50 mph it would do the exact same thing de-accelerating without touching the throttle and upon coming to a stop would stall and be difficult to restart. Obviously a fuel delivery issue. Any guidance on trouble shooting would be greatly appreciated

Clean the carbs and check fuel lines. Best thing i've done is buying a ultra sonic cleaner from harbor frieight. I take the carbs apart and throw it in there with simple green. Cleans them up nice.

it's fuel injected. Start with fuel pressure.

Replace fuel filters, then check PSI output from fuel pump.

First thing I would do is a compression test on all cylinders. Before you start running down rabbit holes,make sure the motor is mechanically sound.In my 40 years of working on outboards many motors were brought to me after dealers mechanics and shade tree mechanics did not fix the problem and charged them a lot of money only to find out motor has dead cylinder. First thing I always did to every outboard that came in my shop. Compression check,takes less than 5 min.

Compression check was done when motor was purchased/installed. Spring is here so time to address the issue. Would it throw a code on an issue like this? Is fuel pump an easy R&R if needed? One other question, my fuel tank breather has been plugged and the tank is in the hull so difficult to access. Can this have an effect on fuel pressure?

Yes it can, Fuel tank needs to be vented.

Stator output
Failing switch box
Failing fuel pump..either the pulse pump or the high pressure
Fuel leak in the plenum
Failing ecu
Failing injector...that usually ends badly.
Flooding injectors..and if they never have been cleaned now is the time.
Collapsed poor quality fuel line/primer bulb.

Will the computer throw a code that would narrow down the possibilities or will it just be a code for fuel rail or something like that?

No codes given. Send the ecu and the injectors off to Brucato.
