Since it is a sea bass, I'd go with a jerk seasoning. Nice and spicey, I bet it would hold up well to all the flavor.

Just had some Grilled Barra on Saturday. Best to keep it simple, yes to salt and pepper (white) with lemon squeezed over the length with a side dollop of thousand island dressing with a mixed fresh salad topped with some Balsamic dressing over the salad.
Go grilled it's much better (and healthier than pan battered).
