Fish Fillets are Pretty Easy…
Use 50% Olive Oil or Avacado Oil, and 50% butter in the skillet…

Put the oil in first and bring the cast iron skillet up to temp... This can take 5-8 minutes pending your stove.

My stove… I set it slightly above medium heat…

Once its up to temp… put a good slice of butter in the skillet, and swirl it all around to mix in with the oil..

Then put the fish in the skillet, season, cook 4 minutes, and turn it over to the other side and cook 4 minutes…

Turn the stove off and put a lid on the skillet, or put the skillet in the oven, for 2-4 minutes pending the thickness of the fish.

When you plate the fish….
Put a slice of butter on the fish, squeeze fresh lemon or lime and eat it…

Let me know if this helped at all.

Pretty much how I do it but I use bacon grease(instead of avocado oil) and butter. Season with salt, pepper, paprika, garlic powder, thyme and oregano. Finish it with a little more butter and a squeeze of lemon.

When using alot of seasoning with cast iron… use lots of oil/butter…

Seasonings tend to stick to cast iron… which can mess’s up the “presesntation”…

For fish/shrimp/scallops on cast iron. I keep it pretty very simple with seasoning… Salt, pepper, maybe a hint garlic… fresh lemon/lime and serve it with a bit of butter….

Yep, even Fried Eggs on Cast Iron…
I even show the cast iron, after I removed all the cooked food, honestly,,, take paper towel to wipe them out… its that simple. Or run hot water over them if you think you need to.

The flat griddles are lodge brand. That I took an orbital sander with 60 grit and sanded them as smooth as I could get them, then I have been re seasoning them sense…. Remember I have a Pitt Boss Griddle and Black Stone that I could have used. But this all works in the kitchen and I dont have to hall shit outside…

Honestly, restaurants don‘t serve food at this level anymore… Which is a key reason I prefer to eat home.

This is the way, the skillet needs to be SEARING hot so you can get that awesome caramelization.

I do Halibut like this and throw some capers into the butter at the end, then squeeze in some lemon in.

Wahoo is super good cooked this way as well.

My technique is to sear in oil hot AF, then off the heat, drop the butter in and let it melt rapidly which also cools the skillet, then just let the residual heat finish the cooking at a slower pace.

Does anyone have a good recipe for a blacked season?

The only cooked fish I like is blacked sword fish..

I bought some sword fish the other day at Trader Joe's, bit I'm not sure what to use for the blacked seasoning.

Any ideas? TIA.

Rub them with paprika and then use what spices you like. I usually use garlic powder, onion powder, salt, pepper. Sometimes a little cayenne or cumin.

How does that cast iron work on an electric stove?
My daughter has something similar, and won't allow cast iron on it, so I use the BBQ on full tilt boogie, outside, for carne asada and such. (Cast iron, of course)

Edit: normally cooks with gas.

She won't allow it? or the stove wont allow it? Is hers an induction? Mine works fine, for an electric. I prefer gas but that's not an option unless I get a propane tank.

Hers should work just fine. The heat dial on our is 1-9. I put it on 5, let the pan heat for about 5min or so. Add oil and start cooking.

Cast iron should work great on induction cook tops. I know people with glass top electric "burners" that claim that cast iron will scratch the surface.

I would think it would work fine in induction also.

I use cast iron on our glass top at least twice a week and it doesn't have a scratch on it.

Yes, cast iron works perfect on an induction burner. Actually, if you're going to cook messy food a lot, buy a single burner induction hot plate. That way you can cook on an island or an easy to clean counter and the clean up is so much easier than on the stove top. When the kids want fried food or lumpia, out comes the induction plate and the cast iron.

This is a Great idea...

Lay down some parchment paper and you have an easy to clean up mess!

I make my Trader Joe's sword fish last night. Tasted a Tiny bit fishy, but might have been my fault cause I defrosted it kinna quick...

Canola oil in the cast iron until is was smoking. Added a bunch of butter at that point and then the coated fish.

I put all this jazz in my mix...

Gonna add some dried Thyme and more heat (maybe red pepper flakes?) next time. Came out surprisingly well for a first time recipe!

Sorry I didn't take any pics. Was swamped making dinner for four!

When I work from home I fire up the smoker a little before lunch time and throw in fish and veggies in my cast iron and throw some frank red hot sauce and seasonings and let it cook for an hour during meetings. Always comes out tasty and doesnt heat up the house or make it smell fishy.

I just took my last bite of it. I cook between 250*-300* depending on how quick I want it. I dont think cast iron has a temp issue. The heat in a smoker is indirect so it isnt getting hit with flames like on a stove. This new fish came out delish and the hot sauce left me a little sweating, Cant wait for tomorrows version.

im still trying to master the steak in the cast iron pan. I really have to put the heat on low after it gets hot, that seems to help alot but still not perfect......

Yeah baby, look at that crust… thats not salmon skin…

Cast Iron Skillet with a some grape seed oil, salmon with my favorite lemon n pepper rub, cooked at 400 degrees for 6 minutes a side. Using lump oak charcoal and 2 chunks of hickory.

Served with a pad of butter, a bit more lemon pepper and broccoli.
