Mmmmm. Looks good, wife’s been buggin me for some salmon or orange ruffy. Grape seed oil?


Yep, Grape Seed Oil and Alvacado Oil have the highest heat points. Meaning they are less likely to burn what your cooking.

and a pad of Butter on the salmon after its cooked.

So since it's Freezing cold outside (it's 60 degrees!) I decided to forgo the Blackstone and use the pan tonight.

HLAM! Blue Cheese steak! Never made it before. I thought it tasted great. 👍🏼

Love this post, just pulled out some Stripper to make fish for lunch in a skillet in the smoker.

As the saying goes, once you get passed the smell, you got it licked. 😍

And I havent even had a bourbon yet.

for those who havent figured it out yet. the OP was referencing Stripers, which is a fish, but spelled it wrong… This is a Striper.

Never done it but I have alot of beef right now.. gonna try a chuck roast in the cast iron🤷🏻‍♂️ just plan on a deep sear and if need be I'll throw it in the oven for a bit. Ohh and some home canned green beans!

New Years Day Tradition…from our Southern Heritage
Hoppin John(black eyed peas, rice, andouille sausage, ham and spices) in the Dutch oven and Bacon grease soaked Collard Greens.

Is there a right an and wrong way to cook those??
Definitely.
Most of the CGs you are going to get a restaurant has been cooked long before they hit your plate. They tend to be mushy and not the best tasting.
We make ours right before we eat them.
Cook down a pound of bacon in the cast iron skillet.
Pull the bacon, dice it up and put in back in the grease, add some finely chopped onions and add some brown sugar and red pepper flakes.
Get it all combined and hot, throw in the CGs and cover.
Let them wilt down and stir to cover in grease mix. Do a couple times and done.
Serve right away.
So good all my grandkids even eat them.
Try to pick good looking leaves and don’t forget to cut the stems out.
Dang good👍

Use 4 fresh bunches. Add 4 cups of water to the mix bring to a boil and gradually add all the cut up in strip lest simmer for and hour.
The basic recipe is on food.com.
We put our own tune on it.
If you’re serious about, figured I better go a little deeper on the detail😁

Ever do the same thing with fresh spinach? Seems like that would be a winner as well. 👍🏼

But …. Since I ‘Weld’ most of my cooks to my cast iron skillets … I’ve found these work excellent at cleaning my cast iron.

Stainless Steel Chain Mail wash clothes.
They also work killer for cleaning BBQ Grill grates… I just use warm water & it knocks off everything nice & clean w/o scratching or removing the seasoning.

I just spray out my cast with cold warm water and a soft cloth if needed. And as for the bbq I use a ball of aluminum foil. But these will work well on the bbq if I can find some. Do you know where I can get some?

Just wondering where you're going wrong at?

Start with the basics-
Country potatoes:
Peel dice and boil potatoes until tender. (15 minutes) Drain.
Get cast iron hot, with your favorite oil, 1 tsp. Add potatoes, salt and pepper, timer for 4 minutes. Flip/stir.
4 more minutes. Flip/stir. Maybe another tsp of oil.
4 more minutes.
Potatoes are ready.

Bacon or sausage is easy peazy too.
