Vic, if you were at Jeepdogs year before last before dam run .....the previous photo was from then.

Underside dry rub applied about 245 am, then top side 315. The aroma is incredible at this point!

Then into the slow end around 345, the rub has moistened completely smells so good. The3 on the top rack are fairly large, then 5 smaller ones on the bottom rack.

It’s so peaceful at this point incredible smells, no busy noise from daily business, no phone, no people buggin.. awesome sky with moon and stars. The stuff we moved here for nearly 30 years ago!

Do you have an internal Temp you cook them to? Or just go buy other methods, like a tooth pick, or?

Where do you get your meat, chicken and pork? What grade of beef do you look for?

We just bought a brisket from Costco looking to smoke it up on DS weekend in Havasu. I think it’s choice

We usually get farmer johns pork shoulder and prefer the bone in, I forget if it’s a called picnic or something else but we get it at Smart and Final

Pork Ribs - baby back we get at Walmart, Smart & Final, or any grocery store but look for a more uniform rack not a ton of fat and all about the same size /thickness

I need to do a pork shoulder and make some carnitas! I love the Trader Joe’s Chile verde in a jar with a white cap/lid
We have made our own before but it’s easy to just buy it.

We do our own BBQ sauce and jar it up, can it, it’s a fun time doing your own sauce.

I usually get all the meat from Sams club, for a couple reasons. First it’s like 2.5 miles from home, seconds a lot of time I will pick up space quantities so a better price per lb. I have been happy with all the meat I purchased there with one exception, one case I bought like a year ago had 2 picnic in the case.

Costco has nice briskets I have cooked before in photo post #3 with 8 pork butt and 5 brisket. After the meat came off that day we did about a 100 ears of corn in husk, yum.

I have not ever cooked prime, wygau, Kobe or the like. To much money, if cook goes sideways. Right now they have 15 rack per case of back ribs, I have bought a case of spares in a while because I will only do like 4 racks at a time, they are full racks I trim down to St Louis cut. Yields waste I don’t have room to store. I am going today to get a case of pork butt and case of back ribs for a bbq on Saturday.

+1 on Sams Club. I buy their choice packer briskets, 15-17 lbs. Pork butts, whoever has them on sale and the same with ribs. You can order meat ahead online at Sam's club. Last year I pre ordered a "plate" of beef ribs. I think it was 9 ribs=24 lbs. Yes, these are the dino ribs. Injected them and smoked them like a brisket. Nobody finished one rib. My friends took home their rib for another meal.
Also, try and get subscribed to news letters/ sales at Creekstone Farms. A few times a year they have great sales on prime briskets an prime tri tips. They're both killer!!

So today I’m cooking for a friend that was medically retired from work. We never had an opportunity to have an event at work due to FMLA. So it’s been about 10 months since we’ve all been together. We are going to have like a work group picnic/bbq at Pyramid Canyon Park in Laughlin, just below Davis Dam.

New version of rolling coal, starting at my house, finishing at park. Never rolled coal with $250 worth meat in the works before.


I started last night trimming, injecting, making dry rub etc......Started fire @3am

Dry rub applied to 15 racks baby backs , will be fall off bone tender, sweet and spicy! That’s the way the guys like them.

I appreciate the information, I live like 2 min from Sam’s club.they offer about the same, nearest Costco is about 95 miles away. I always consider Costco when I am near . Thank you
