that looks awesome. i have heard its pretty involved to make but have never tried. would like to give italian and linguesa a shot one of these days.

Family in NOLA makes a crawfish sausage with a pinch of pineapple and seasoning rolled in.
Off the chain good.

it wasn't too bad, stuffing it was a pain, I was using the kitchen aid attachment, worked great for grinding, but I think I'll buy a stuffer for the next round.

What’s the recipe?
this is roughly what I did, I added more at the end w/o measuring, and usually over measure
1/2 cup cayenne
1/4 cup California chili powder
1/3 cup sugar
3-4 table spoons chili powder
3-4 table spoons of black pepper
1ish table spoon garlic powder, onion powder, cumin, ground coriander, mustard powder
1/4 cup salt
prepared mustard
8ish lbs pork shoulder
3-4 lbs beef chuck (plus trimmings from a NY strip steak)
natural hog casings

thats what id be going with the first time out, kitchen aid attachements.
