I made sausage for the first time. Turned out really good. I was surprised to be honest. I used 8 lbs of pork shoulder and 4 lbs of beef chuck. Smoked over hickory
it wasn't too bad, stuffing it was a pain, I was using the kitchen aid attachment, worked great for grinding, but I think I'll buy a stuffer for the next round.that looks awesome. i have heard its pretty involved to make but have never tried. would like to give italian and linguesa a shot one of these days.

1/3 cup sugar
3-4 table spoons chili powder
3-4 table spoons of black pepper
1ish table spoon garlic powder, onion powder, cumin, ground coriander, mustard powder
1/4 cup salt
