Loaded baked potato soup

You may have ordered this at the Carnation Cafe on Main st Dizland.
The Chef that makes it has been doing it at the CC since 1956.

Ingredients:
1 pound bacon, roughly chopped
1 medium yellow onion, diced
1 large carrot, peeled and diced
3/4 cup diced celery
4 large russet potatoes, peeled and diced
4 medium red potatoes, diced
1/4 cup flour
2 cups chicken or vegetable stock
Coarse salt and freshly ground pepper, to taste
4 cups heavy cream
Optional Garnishes: chopped chives, bacon bits, sour cream, shredded cheddar and Monterey Jack cheeses

Method:
In a 6 ? 8 quart stockpot over medium heat, fry bacon until crisp.
Remove bacon and drain on paper towels (reserve half for garnish). In the bacon fat, cook onions, carrots, and celery until the onions are translucent. Add potatoes and cook for 4 minutes, stirring occasionally.
Sprinkle in flour and stir constantly over low heat about 5 to 7 minutes until the mixture thickens slightly. Add stock and half of the bacon. Season with salt and pepper.
Over medium-high heat, bring the soup to a simmer and cook for 25 minutes, or until the potatoes are soft. Mash some of the potatoes for thicker, creamier texture. Add cream and simmer for 5 minutes. Adjust thickness by adding water or stock. The soup should have a creamy consistency. Season to taste, and garnish with toppings, if desired.

Note: Something I learned doing Mess Duty (aka KP) in the Marines: Soak diced potatoes in cold water until ready to use to keep them from turning brown. To make bacon easier to chop, lightly freeze.

Whaaat? Never knew they had this there. Will have to try it. Love the potato cheese soup at Marie Calender's, but I won't eat there anymore. Food and portions are weak now for the price. Claim Jumpers has a good one too. :thumbsup

Had the wife make it over the Turkey Day break. It was GREAT! Especially on the cold night we had. The wife and I did get into a little argument when she bought Whipping Cream instead of heavy cream? Well she googled it and I was wrong, same thing? Oh well, cant be right all of the time. Put a couple drops of the Rooster hot sauce in it for a little zing. Wow. Thanks again!

I just made 6 quarts of it and added a $8 pint can of deep ocean clams from Smart and Final.
An outstanding Clam Chowder.
I'd add a little milk when it thickened too much.

Was tough to find heavy whipping cream just after Christmas.
Ralphs had it on sale and COSTCO had Half Gals.
It freezes nice BTW.

My kid has always maintained that he doesn't like soup. Funny how this seems to be an exception to the rule in his eyes. Claims it is really just a baked potato.

We made this last night. Only used 1/2 the heavy cream... didn't want to go to town, the soup was great. Thanks for the idea & recipe.
