16 Hatch green chilis
2-3 lb pork loin
quart of broth
1 onion
garlic
4 large or 6 small tomatoes.
cumin
salt
pepper
Cube the loin and brown it. add chopped onion and garlic.
Blend peeled chilis and tomatoes, add to pork loin.
Add quart of broth, or I use beer.
Bring chili to a simmer. ~20-30 mins.
~1 tbsp cumin.
Season to taste
Since then I've made several changes and adjust the heat depending on the intended crowd, but this one was a great starting place. That is if you believe that real chili doesn't have beans....lol
