Damn that was one hell of a meatloaf...
Cooked at 325 degrees with mesquite charcoal and a couple chunks of cherry.. took about an hour and half.

Recipe
2lbs ground beed
Diced- onions, bell pepper, chives,
Crushed ritz crackers
Fresh garlic, salt pepper
1 egg, some hawaiin bbq sauce.. 1/4 cup ish.
1 packet of Lipton Onion soup mix

All mixed together and placed on the smoker at 325 degrees. Pulled it at 152 ish internal temp, put a hint of bbq sauce on top..

Look at that smoke ring...

Btw..this recipe is based on what I had at home... i didnt go shopping to get other things i normally add. Like groud pork sausage, or bacon, or many other items.. i truly never use the exact same recipe twice for anything i cook... just use what i have.

Destroyed it.. it didnt last long..

Just quit smoking a month ago...people like you posting this stuff is gonna' get me fatter than a christmas turkey! Dang that looks tasty!

Was going to say! A little Jimmy Dean pork in the mix is always a winner.
I usually add a little Worcester sauce and mustard in the mix too, but I’ve never had a smoked meatloaf. Sounds amazing!
I usually do mine in an oven on a cast iron skillet. And, sometimes a drizzle of bbq sauce, other times a layer of pilsbury biscuit on top.
Sounds like I need to get a smoker.
To create the ultimate..Smoked Mac&Cheese stuffed meatloaf.

Both, then direct at the end.

I smoked it at 225 for abit, before i opened the vents and brought it to 325..

Weber Summits are amazing.. i know that thing so well now.. I can dial in temps within 5 degrees, just by intake and exhaust vents.

My wife and son just informed me, that they want Meatloaf for dinner..

Gotta make a store run today, so todays recipe may be differnet than the above.

Thinking some sausage in the mix, and a few other ideas,

If guys want an update let me know and I will do an update of my plans..

The morning started off right, with Bloody Mary and NFL redzone.. gonna be a good day.

2lbs Ground Beef
1 lb Pork Sausage
2 Eggs
Worstershire Sauce
Ritz Crackers
Bell Pepper
Onions
Garlic
One package of Lipton Onion Soup Mix
Some of my home made rub
Pepper Blend

Chopped the things that need to be chopped, crack things that need to be cracked, shake the things that need to be shaked, all in one big bowl... mix it thoroughly together with your hands... mash it up good...

Using the Weber Pans as molds, put Saran Wrap in the bottom of the Weber mold pan.. Put all the stuff in the bowl into the pan... See pics

Then go prep the smoker....

As you can see, I will get about a dozen coals lit, then I will snake them into the unlit coals... I will post more pics later...

I am using Kingsford Hickory Charcoal. I lined them up in a “Snake Method” which allows you to control your temps for a long period of time, and extend your refueling timeframes...

Then I put a drip pan under the Meat Loaf, so I dont have a mess to clean up...

Its about 250ish at the moment... once it hits 275, I will close the vents a bit, to maintain that temp.... and let it smoke/cook away...

As usual, its different from the prior times...

Pretty much the same as above, buttttt, I am making it low carb/Keto style. No crackers, replaced them with 3 ozs of Pork Rinds, added some celery, because I only had 1/2 of a bell pepper...

Just put it on the smoker...

Meatloaf is one of those dishes my family agrees (even the wife) mine is better than most. Including hers:D
Yours is getting close to mine. You have a couple of things in there I don’t and I have a few things in mine you don’t.
It’s one of those classic American meals I love experimenting with, and trying different versions.

100% agree....once I did meatloaf on the smoker I'll never do it any other way

The weather is perfect in Murrieta Ca today...

Ya know what day it is... yep its hump day, and meatloaf is gonna get me over the hump..

Thinking about firing up that smoker at about 4pm....
Make a nice Ice Tea, grab the labtop, set it up on the patio.
Get a bit of work done, why smoking a meatloaf...

Shit,,, might even fire up stogie... with a little splash of bourbon (after the ice tea of coarse) while I am slaving away cooking dinner...

Yep, I just talked myself into this.

The Rub I make... and why...

Many years ago, I created my own rub, because everything that was for sale was about 50% Salt or more...
Dont get me wrong.. I am not a anti salt person... however I feel that salt overpowers most other flavors in a rub... I wasnt going to waste money on grocery store rubs, that cost alot, and was mostly salt.

In my my opinion, salt should be in much much lower qty's..
So I made my own... I want to taste the garlic, onion, pepper, etc etc etc... BTW, I use a Smoked Sea Salt.. adds a great hint of smoky goodness.

Telling a buddy/customer of mine about it one day, and he said he wanted to try it.. and he loved... So that year, I gave out 10 bottles of my rub at Xmas time to him and his team members... that was over 10 years ago.. Now I give out 250 bottles at xmas... , I could easily double that.... Customers love this stuff.

So I put my corp logo on the bottle and its a give away from a business perspective. My customers love it. Its far better than a Pen, coffee cup, calendar or whatever... Why because they feed there family... I am no longer the "Vendor", I am now referred to as my buddy Bryan gave it to me.. Establishs a better relationship.. It doesnt cost me as much as other give aways.

Back to the Rub... PM your address... I will send you one, when I make up another batch.. I am extremely low at the moment, because (Temecula SPice Merchants) hasnt been open. Thats where I get all my spices from.. The freshest money can by in my opinion.

One drunken night... I created a company for the Rub.. Havent had the time to get it running yet... But I do own...
"Smoke it Up BBQ" .net even have a logo... This seasoning is called Grill it Up...

The seafood version of it... called "Herb it Up".. also have "Spice if Up"....

Again, when/if I get time, maybe in retirement in 15 years, I might do something with it. Right now my day job pays the bills.

vidalia onion,
crushed cheese-nip crackers and cruton
worchestshire sauce,
bbq sauce,
kosher salt
pepper
1/4 cup of rustic cut mexican cheese blend

Brown sugar and whatever BBQ rub/seasoning i had laying around lightly rubbed on the outside

Just threw a simple version of this on the smoker for dinner tonight. I will update this later when I pull the meatloaf off the smoker. Damn I like smoked meatloaf…. Ummmm goooddddd

Cooked it at 300 degrees for about 1hr and 15 minutes, bumped the temp up to 335 and cooked it to 160 degrees. Took about 1.5 hours.
