First attempt at them and turned out pretty good.
Bought a whole pork belly from Costco. Trimmed the fat off and sliced it then cubed, will cube smaller next time they didn't shrink as much as I thought they would.
Seasoned them up and on the offset for 2.5 hours at 250, pulled them off and into a cast iron skillet added more rub and some BBQ sauce then back on the smoker for another hour.
Pretty tasty!
