Prime Rib ribs

So usually ribs are cooked to 200* or so. But a prime rib gets pulled way before that. What's everyone doing with the ribs? I've put them back on while we eat until they get up to temp and I've served them after cooking the roast as well.

Mine usually goes to the dog.. LOL. Either that or I save them for stock. We just don't eat beef ribs. A friend of mine fires up the grill and while the roast rests, he grills the ribs till they are done.

We threw ours into the crockpot a few days later for shredded beef tacos. On high for 4 hrs. In addition to the bones with meat still on them we added red enchilada sauce, beef stew packet, some water, 6 cloves of garlic and 1/2 white onion.
