Did another brisket for my wifes BDAY party on Saturday.
It was a full packer prime brisket from costco. I had bought it a while ago and had to freeze it. So I took it out a week before and thawed it out and left it in the refer to age a little in the cryovac.
Trimmed and seasoned with a little olive oil and some Ployboys Bovine Bold Thursday afternoon.
Got the fire going around 7:15 Sat morning and put it on the off set at 8. Smoked with red oak for about 9 hours at around 300 but had a couple high temps during the cook but all in all it came out pretty good.
The flat was a little dry could have pulled a little sooner but the point was near perfect.
