Smoked Deboned Stuff Whole Chicken

i took a whole chicken and removed the breast, back and thigh bones and stuff with saute garlic, onions, spinach, mushrooms. let the stuffing cool the top with feta cheese. Rub the out side with some EVOO and your favorite rub. Put on the smoker for 1 hour at 180* then turn it up to 350* for another hour.

Really not as bad as i thought it was going to be. i watch several youtube videos and found that the one on blackbookcooking.com to be the easiest. I also took the thigh bones out too. Just make sure you have a sharp knife

I'll check it out sounds like a bear , grabbed the breakfast casserole recipe off RDs and the girls have made it the last 3 Sunday trying different variations but pretty dayum good . tried mixing sausage & bacon :thumbsdown

As threatened, we are making this for tonight.

Started with a Trader Joes Fryer.....

Getting the carcass and thigh bones out wasn't as difficult as I thought it would be. I watched the video noted above once, and just followed the directions. In the video, they mention getting a disposable scalpal from a pharmacy. My wife went to CVS, and they said the only place you can get them is at a medical supply store. Must be a California thing. Anyway, I just used a small sharp knife, and it worked fine.

Here are the first pics.

The bird is now sitting in the fridge slathered in dry rub. In a couple of hours we'll make the stuffing and get it stuffed and trussed and then onto the weber (no Traeger yet for me) for smoking......

I'm hungry already..... :champagne:

The end result. Not as pretty as B2BR's but every bit as tasty I'd be willing to bet.

Looks outstanding :thumbsup What did you use for a stuffing?

I forgot to take a pic of the stuffing (too many beers at that point).

Anyway, I did your recipe, but I used red onions.

The whole thing was outstanding.....
