What are you going to be cooking on? Just control the temp at around 225-250 until the butt reaches 200 or just shy of it. Then rest for at least 30 minutes. Plan for a loooong cook. Better to be done early than late. Beware the stall! Just use whatever rub you like when you are getting started.you can dial it in later. Just don't use one with a ton of sugar while you are figuring it out because if you lose control of your temperature, it can burn.

Woods like hickory and apple work well with pork. Mesquite is a bit too harsh and better for beef. You can also get by with oak.

If I am running behind schedule with a shoulder, sometimes I will either foil it or cranks the temp to 260 or so to get through the stall. Then return to normal. Eating dinner at 10pm is no bueno.
