Time and temp?
Fry bacon in skillet remove bacon and add Brussels Sprouts bbq spice seasoning of your choice, one minced onion and a few minced cloves of garlic to Bacon fat and put in Smoker at 225 for 1 hour 20 mins or until they soften up, toss with some bbq sauce and crumbled bacon with 30 mins or so left. Can mix up some bbq aioli with bbq sauce, Mayo and sour cream for dipping

No picts, smoked porterhouse with reverse sear, grilled corn and some mac salad! Yum! I had the filet side of the porterhouse.

Good thread, always reminds me when the weekend comes up to smoke something! Maybe some ribs?

Nice, I did up a half a tri-tip 2 nights back.

Outside of a Santa Maria pit over red oak, this is the only acceptable way to do a tri-tip, at least I got the red oak chunks.

what do you think of this thing so far been looking at getting one
It’s ok it did well on the pork shoulder but the ribs I’ve done on it haven’t turned out as well. I am gonna use it as more of a BBQ then a smoker and stick to the pit barrel for most cooks.
