I seasoned with salt and pepper only. Then reverse seared it, 275* set point, worked it up to 120* pulled it off cranked the Yoder up to 600* and seared both sides and done. Lights out totally awesome.

Made some cowboy butter to go with it. Google it it’s really freaking good. You can season it anyway you want and it’s sooooo good.

Love the marbeling on that steak...
My Rib Roast was not prime... but it was still pretty good.

So lit one parafin cube, put 6-7 briquettes on and around it, with briquettes around them and wood chunks..

BTW the charcoal is Kingsford Apple, wood chunks are apple.

Then I put the heat deflector on top of the lit charcoal, two drip pans on top of deflector, which makes for easy clean up, then the grill, then the meat..

Turkey was dry aged 48+ hrs then smoked. Gotta be good right? 15 lbs. of prime rib in the oven if it isn't.

I just got the pit boss vertical smoker and 3rd time using it and already having problems....

Son's birthday day request tonight was prime rib and asiago potatoes. Yeah, I can do that!
Salt, pepper, rosemary, garlic, thyme rubbed and smoked to 120 and then moved the coals to the Weber kettle and broiled the top n bottom for a couple minutes.

Loving me some Tri Tips. Those Briskets look great. Wife has been mentioning lately she wants some smoked brisket but Costco was out

About 5 hours in, and 135* smoking at about 220. I’ll wrap her up in 30* or so.

I got a pork butt Sous vide for 24 hours then smoke tomorrow. Marrying these two technologies has changed the game.

Man my heat element went out and its been on back order for two weeks. Hopefully next week, we are missing our smoker we used it many times a week.

The pellets dropped in the hopper until about half full then only the center fell through leaving a hole, I should have taken a picture. As soon as I touched them they all filled the hole, but it was too late to get it to restart. Luckily the meat was at 160, I pulled it off and put it in a metal pan, covered it with foil and am finishing it in the oven. I checked the fire pot and it was full of pellets, I cleaned them out and it fired back up. The older this Traeger gets the more temperamental it gets.

Doing another pork butt today, I put it in at 7:00am. Gonna be doing pulled pork sammies and carnitas tacos all week. Looks like I picked the wrong week to start my diet again. View attachment 976996

We usually have a shitload of pulled pork as well. We started buying pizza dough from Trader Joes and making BBQ Pulled Pork Pizza, with BBQ sauce, cheese, onions and pineapple. Give it a go, my kids even really like it.

That’s happened to me before. Pull everything apart vacuum it out and you should be good to go.👍🏻

Nine hours later, the shoulder bone pulled out clean, drained off the juice and separated the fat and worked it back in after I chunked the meat. Made chunked pork sammies with cole slaw with spicy vinegar sauce on toasted Hawaiian rolls. Was going to do tacos too, but I’m too stuffed now.

Not sure if you have your grate on in your hopper but I have heard people removing the grate to help prevent this
