I fired up the wsm at 4am 30 minutes later the guru went south.
Had to pour the hot coals into the Klose.
So we just loaded it up added wood and cooked all day.

A little salty. I spiced the skin and under the skin. Next time just under will be good. But the juiciest turkey ever!!

Injected with apple juice and garlic salt and pepper rub. Bacon because rhe meat is very lean.

Our ham from last night.... It was a pre-cook, but the smoker still made a huge difference. Went with mustard / rib rub, followed up with a mix of bbq sauce & honey with about 1 hr to go on the smoker. Turned out great :thumbup:

Bumped into a guy at Parker in the dust talk band he works for a spice company. Hooked me up with a bunch of rubs etc.

Pays to eat dust in Parker! :)

Awesome racing too.

Turned out good but had so much going on on the grill forgot to take a pic. Also had shrimp skewers, BBQ corn on the cob, Jalape?os and zucchini.. I need 2 grills..lol
