That's an awesome grill set up!! I wish I had something I could cook over wood!!! Steaks would be soooooo good!!:bowdown:Idaho lake trout and t bones on pecan wood. Very tasty!

Eggs were on for 45, the came out rubbery. Tasted good. i think I would do them at a lower temp.I was at 275. Chili verde was Tomatillias, onion,garlic, cilantro and some black pepper. little salt.How long do you smoke the eggs? And would love a good chilli verde recipe
Smoked bird and smoked deviled eggs. Just using some left overs for enchiladas with homemade chili verde.

Yep. Wsm. Skin was good. It's all in the prep. Rub the skin with your seasoning (with salt) the day before and leave it in the fridge overnight uncovered. The fridge will dry the skin and the salt will absorb into it.
