Escalante in my opinion is the best section of Powell. You will want to go up Davis Gulch & 50 Mile Canyon. The Gregory Natural Bridge is up 50 mile but I'm sure that is under water now. Cathedral in the desert is up Clear Creek Canyon also in the Escalante arm. These 3 canyons are all on the left going in.

its really hard to say because of the changing water levels. i didnt go last year because i went sailing, but was there in 21 when its was crazy low. Key places like LaGorce arch (in escalante) were unreachable, rainbow bridge was a looong walk to get there. but it also opened up new arches and hollows that hadnt been seen in many many years.

point is you just have to go out and explore. every time you turn a corner there is some new formation, canyon, or beach to just marvel at the beauty and serene feeling that is unlike any other place Ive ever boated. its the reason i keep going back to powell and havasu/mead less and less. you will find plent of arches and overhangs you can pull your boat into shade and relax and swim or whatever. i also rarely bring the bimini for a powell trip as you end up spending much of the days in shaded canyons or hollows where it isnt needed, its also not a crushing hot as the river. think high season 105 (maybe) during the day and 75 on the water at night.
