Deep fried catfish

Just picked up my first deep frier. Going to do a bloomin onion tonight. This weekend, i'd like to try catfish. Anyone have a great catfish recipe to get me started??

Well no recipes so I mixed and matched a few online from various pages. It turned out GREAT!!
1/2 cup buttermilk, 1/2 cup water, 1 egg. Mix together in a small bowl.

1/8 tspn. salt/pepper
1.5 cups yellow cornmeal
1/2 cup flour
2.5 tspns. Old Bay seasoning
Put in 1 gallon Ziplock

1-2 lbs catfish fillets


Soak fillets in milk for 1-2 hours.

Dredge fillets in the buttermilk, water and egg mixture then in the seasoning mixture in the Ziplock.

Heat oil to 340 degrees. Add 2-3 fillets at a time into the hot oil. Cook submerged for 6 minutes.
Pull and let oil drain off in a paper towel lined plate.
Serve.
I cooked 10 good sized fillets and between my wife and I we ate 7 total. Everything held together and the seasoning was spot on.

Just get one of those southern fish fry packages at the market. Nothing really to it.

Take the damp catfish fillet roll it in flour then dip it in egg then into yellow corn meal then to the fryer. Once out of the fryer stab it a bunch with a fork and squeeze the lemon on it!

Buttermilk dredge is a must. Forget the egg. We use Zateran's fish fry which is cornmeal based. We sell lot's of catfish every week at the restaurant with a all you can eat Friday lunch buffet.:D
