Trader Joe's Enchilada Sauce

I just made some chicken enchiladas with Trader Joe's Enchilada Sauce - Mmmm. The sauce by itself isn't that appetizing, but once it's cooked in the enchiladas - wow! This stuff is killer! Another time saver is using one of those ready to go roasted chickens from the supermarket - just shred it and your ready to start making chicken enchiladas.

I made some rice with the fideo recipe I posted in the recipe section and polished it down with a Tecate.

Life is good.
