Sitting here eating a burger at the In n Out off of Lyons in Santa Clarita.

A girl is doing an interview and she asked starting pay. The starting pay is $19.75 and the girls giving the interview said that in January that would be going up.

Holy inflation. But my double double, animal fries and drink cost $14 bucks. Still seems like the best deal for fast food.

I will deal with the costs of paying them $20 an hour. They act like they want to be there and make honest efforts to get everything right. Look at the rest of the mess fast food is, there is a relationship to that and what you get.

That same meal at Macdonald’s is now over $22 ! The best fast food places seem to be Chick Fil A and In and Out . I wonder how they are able to hire people that are actually cordial , polite and don’t look at you with seething contempt . Any other fast food places you are guaranteed to get cold / luke warm food and the wrong order . It’s no wonder so many fast food places are struggling

Well I’ve now watched 3 people get interviewed and have listened to the post interview conferences lol. So far 0 for 3. I imagine both In n Out and Chick Fil A only take applicants that will fill the role. Versus just a warm body

My daughter has been working at In-N-Out for about a year and a half. She's just now at 19.75, at level 3 or 4? The people she works with tend to be good, and they work around her school schedule. It's about the only chain burger I'll eat.

I do miss a good "Tam's Burger" from the hood though 🤣

Best operation around. Staff is amazing, everyone is smiling, running at 120%.
If I N O could package that attitude and sell it they could become wealthy…..again. Nothing like a small family business.

There are some other ones that pay pretty close but their staff is terrible.. I dunno how in n out manages to pull off the good hard working employee thing in modern times

Per Lynsi Snider from her new book The INs-N-Outs Of IN-N-OUT Burger the first step in an interview is the person's attitude/presentation. If you don't pass that hurdle your not even considered. The highest pay position for a general worker at any location is the employee flipping the burgers but I can't recall that $$.
A general manager is at $165k per year + benefits. She knows how to run a business that's for sure.

The premier position at In-n-Out is burger flipper (aside from manager). This was per Huell Howser’s California Gold episode many years ago.

Just saw SoCalDave posted as per the CEO’s book.

Amazing company considering they basically haven’t changed their menu or values.

That or Galaxy Burger.

Was in Gardena a couple weeks ago and got a burger right by the Hustler Casino - Astro Burger. It was good.

They were actual potatoes 5 mins before you ate them.

That's why In and Out fries suck. You don't get sufficient control of the sugar and water content in the fry if you use fresh potatoes.

Starting with frozen, pre-cut fries is better because
1. The potatoes are harvested when they are at their peak for making fries and then frozen
2. Freezing does things to potatoes that makes the fries better (you can read about it in Kenji's book)

It’s culture. They hire people that fit their culture, not rail against it.

Exactly.

They pay better than the other fast food chains. Therefore they can picky with whom they hire. They hire people who fit their culture and who are not total dumbasses.

That means that they have the best staff and the simplest menu.

That makes for great productivity which means that they can charge less for quality food, which means that they get more customers, which means that they can pay better than the other fast food chains.

It is self-reinforcing.

Steak and Shake is to In and Out Burger what Five Guys is to Wendy's or what Habit Burger is to Burger King.

Steak and Shake is to In and Out Burger what Five Guys is to Wendy's or what Habit Burger is to Burger King.
When I did car shows, we'd hit the "regional" burger places. "Steak and Shake" was good. White Castle? Not a fan 🤣

White Castle is like dog food. Krystal is a Southern copy. Both are terrible. I do remember that my son liked Krystal when he was 2 years old.

I was a road dog, not so fine, food critic...following the show circuit. Met a lot of nice people though 🤣

Now the Taco Bell managers making 6 figures to me is wild. I could only imagine how frustrating it must be with how fast the turnover rate is. Juggling 5 ppl on the roster and 3 have excuses every day.
